Kiss Mah Grits


"Good Morning Aunty. How are you doing today?

A young friend home from her vay-cay stuck her haid in the kitchen door.

"Welcome home," I said.




She sniffed the air. "You making grits?"

I nodded an' smiled.

"Oh now, Aunty, why not have some oatmeal instead? It's much better for you."

I looked up, held mah smile. "It sure is."

I stirred the pot of grits, bubblin' gently, cookin' in milk.

"I could run home," she offered, "and bring back some oatmeal if you like? I have that Irish authentic steel cut variety."

I put down mah spoon, opened the pantry door, " Ya' mean this variety?"

She looked quizzical, "Why yes."

I let it hang in the air.

"Just curious Belle, why do you choose grits--they are empty calories, you know?"

"I know. Thas' why I cook 'em in milk."

Mah friend sighed. "But, Aunty B, the oatmeal is still a far better food. Why not switch?"

I gave the pot one last swirl of the spoon, yanked open the refrigerator door and snatched out a block of aged cheddar.

"Why not, Sugar Pie? 'Cause ya cain't put cheese in oatmeal."

Now I want a serving of biscuits 'n' gravy with a nice serving of stoneground grits. See what you have done? It's 3:10 in the afternoon and I want breakfast.

I had grits (with Cheese)for the first time during the 2009 Blog Summit and they mademe shudder. Did.Not.Like.

However, the oatmeal isn't as healthy and fabulous as your friend thinks, so I agree with:

"Eat my grits, Pal!"

Mmmmm, sounds delish, although I am not an eater of the grits variety. Am southern, but not that southern. And besides that Aunty, I bet you eat healthier than any 3 neighbors of yours. Extra cheese in my grits please. :)

Seems we’ve both got grits on the brain today, Aunty :) and I would sorely love to try yours.

As for the grits vs. oatmeal thing, I guess you can combine either with whatever tickles your particular fancy. I have a friend who takes her oatmeal in a savory direction by cooking it in Trader Joe’s carrot soup instead of water and sometimes adding veggies. And I suppose there’s no reason you couldn’t put cheese in your oatmeal if you were so inclined . . .

grits luv shrimp

Foamy,
Best easiest biscuits evah:

Preheat oven 425
lightly butter baking sheet

2 cups *self risin'* flour
1 1/3 cup cream

stir until just combined, drop by large spoonfuls onto buttered baking sheet.

bake 10-12 minutes until edges barely golden.

You woan mind the calories. If ya think ya do, use 1 cup half an half instead of cream.

Oh dear. I knowed Shamy made a fine pot of cheese grits. Mercy. Mebbe it's a learnt thang--like rhubarb which Aunty despises. I think ya gotta grow up eatin' that stuff or fergit it.

OOooops! I think it must be a texture thang, huh? I might eat healthier most days, but when the fired green tomatoes and grits mode is on me ('bout twic't a year) it is a mental health issue an' that makes it good fer me.

cheese in oatmeal? I cain't git thar' from heah...but carrot soup/ juice to cook oatmeal in, OK, I can go thar.' I'se cmin' to check out yore grits!

I wuz recently given a new cookbook that is 100% shrimp an' grits recipes--mercy, ya cain't fathom all this inventiveness.

And woo-hoo, one of them entrepreneurial types round my parts is cookin' up a Low Country Boil for this weekend. Hoping I can talk them into letting me pick up some early to take to Cindie down on the river!

Oh! Foamy?
Ya can roll them biscuits if ya' want--jest let 'em rest 5 minutes, stir a few strokes, then roll 'em (gently!) out and use a jelly jar or if youse fancy, a biscuit cutter.

We Yankees grew up on oatmeal, but on a trip South, my husband discovered grits...he is a convert!
I keep some in the cupboard in SOUTH Dakota now. :o)

I don't know as I believe oatmeal is all that healthy for you. My favorite way to eat the stuff is in a cookie or a muffin. ( You know muffin is just a pretend word so you don't have to admit you're eating a cupcake?)

When I do eat it , in a bowl,
the "healthy way" it has golden raisins, real vanilla, brown sugar, toasted almonds , real butter and half and half.
Course when I do eat this bowl of sin I don't bother to tell myself it's for lowering my triglycerides.

Blowfish is a non-grits eating yankee. Truth is, coming up he would not even eat his tiny little Italian grandmothers polenta. The texture thing plus he says it has no taste.
Uh-Huh,
now he knows the come to it experience of creamy, rich cheese grits with an over easy egg on top sprinkled with all natural bacon, (no nitrates, no citrates, no preservatives and never been cured bacon from the local farmers) There are no complaints about texture.

Here's hoping them grits was the very comfort you needed.

@ Foamy,
I use pretty near the same biscuit recipe as Aunty only it has to be Martha White self risin' flour and all natural buttermilk. It's worth getting your hands in flour for sure. Ride on down I 26 and we'll have us a biscuit makin party.
